Honey Ginger ANZAC Biscuits
125 g / 1 cup Uncle Tobys Oat Favourites -Creamy Honey flavour
60 g / ? cup Desiccated Coconut
140 g / ? cup Sugar
160 g / 1 cup White Wings Plain Flour
2 teaspoon Ground Ginger
60 g / ? cup Diced Glace Ginger
1 tablespoon Honey
100 g / ? cup Meadow Lea Spread (melted)
1 teaspoon Baking Soda
2 tablespoons Boiling Water
Method [makes 18 biscuits]
1. Pre-heat oven to 150 ?C.
2. Mix Uncle Tobys Oat Favourites, coconut, sugar, sifted White Wings Plain Flour, ground ginger & diced ginger together and set aside.
3. Mix baking soda with boiling water, add honey and melted Meadow Lea spread.
4. Add to dry ingredients (listed above) and combine with a wooden spoon.
5. Place 1 tablespoon of mixture at a time on to a baking tray covered with baking paper and bake in a slow oven for 15 – 20 minutes at 150 ?C.
To get a more perfect round biscuit for each recipe, place mixture into an egg ring and press down lightly then remove ring before baking.
