Cocktail For The Weekend: Best-Ever Bellini

You're only 2 ingredients away from a delicious bellini cocktail. The ideal weekend cocktail, especially served with a leisurely brunch.

Ingredients
1/3 glass fresh peach puree or juice
2/3 glass Champagne or sparkling wine

Method
1. Muddle a whole peach, or fill a Champagne glass with peach juice.

2. Pour Champagne in slowly and give a gentle stir with a bar spoon or skewer.

Variations: Try a Bellini with blueberries, as shown, or with nectarines, blood orange, pears, cranberries or your favourite fruit.
