Never-Fail Chocolate Cake

Trust the CWA to come up with the easiest, most divine chocolate cake than anyone can whip up at a moment's notice! This one-bowl-wonder only has a few ingredients and tastes delicious plain or iced. Recipe by Kathryn Muir, Tennant Creek Branch, NT from CWA Classics, published by Penguin, RRP $49.95.

MAKES 1 LARGE OR 2 SMALL CAKES (SERVES 12–16)

Ingredients
2 cups self-raising flour
2 tablespoons cocoa
2 cups sugar
2 tablespoons instant coffee
4 eggs
1/2 cup Brandavino
180 g butter or margarine, melted
dash of vanilla essence

1. Preheat oven to 180°C. Grease one 23-cm cake tin or two smaller tins.

2. Sift flour and cocoa into a bowl and combine with all other ingredients. Pour into prepared tin/s and bake for 45 minutes.

3. Serve plain or iced.
