Aussie-Inspired Ice Cream Recipes

All these Aussie-inspired ice cream recipes have been made with all Aussie ingredients from Coles Brand, using the brilliant Sunbeam Gelateria ice cream maker!


Billy Tea Ice Cream

Traditional Billy Tea with Aussie honey – straight from the billabong in Waltzing Matilda.

Ingredients


2 cups Coles Brand whipping cream

1 cup Coles Brand whole milk

¼ cup Coles Brand loose leaf tea

9 large Coles Brand egg yolks

¼ cup Coles Brand brown sugar

½ cup Coles Brand honey



Method

Combine the cream and milk in a heavy based medium saucepan.


Bring to a gentle simmer over a medium heat, then add the tea and remove from the heat. Cover and steep for 15 minutes.


Place the egg yolks, sugar and honey in a large bowl and whisk for 2 to 3 minutes or until the mixture is thick and creamy.


Gradually whisk the milk mixture into the egg mixture to blend.


Return the custard to the same saucepan.


Cook the custard over a medium to low heat, stirring constantly, for about 10 minutes, or until the custard coats the back of the spoon. Do not allow the custard to boil or it will curdle.


Strain the mixture through a fine-meshed sieve and into a large bowl.


Set the bowl of ice cream base over another large bowl of ice water and stir the mixture until it is cold.


Pour the chilled mixture into Sunbeam Gelateria ice cream maker and process according to instructions or until almost set, remove ice cream from machine to a storage container and freeze ice cream covered until serving.



Lamington Ice Cream

A delicious chocolate coconut ice cream that tastes just like the best lamingtons!

Ingredients

2 cups Coles Brand whipping cream

1 cup Coles Brand whole milk

1 Coles Brand vanilla bean

9 large Coles Brand egg yolks

¾ cup Coles Brand caster sugar

100 grams Coles Brand dark chocolate, roughly chopped

1 ½ cups Coles Brand shredded coconut

Method

Combine the cream and milk in a heavy based medium saucepan.


Using a small sharp knife, split the vanilla beans in half lengthwise and scrape the seeds from the vanilla beans into the milk mixture, then add the beans to the milk mixture.


Bring to a gentle simmer over a medium heat. Cover and steep for 15 minutes.


Place the egg yolks and sugar in a large bowl and whisk for 2 to 3 minutes or until the mixture is thick and creamy.


Gradually whisk the milk mixture into the egg mixture to blend.

Bondi Beach

Fit, healthy, sporty, summery and yummy, cool off with this refreshing strawberry frozen yogurt!


Ingredients

3 cups Coles Brand full fat plain yogurt

¾ cup Coles Brand caster sugar

1 teaspoon Coles Brand vanilla extract

1 teaspoon lemon juice

1 packed cup quartered fresh strawberries

2 tablespoons Coles Brand icing sugar


Method

Combine the yogurt, sugar, vanilla extract and lemon juice in a large mixing bowl and stir well.


Pour the mixture into Sunbeam Gelateria ice cream maker and process according to the manufacturer’s instructions or until almost set.


While the frozen yogurt is being churned in the machine, blend the berries and the icing sugar in a food processor until pureed, strain berry mixture through a fine mesh strainer.


Once the frozen yogurt is almost set, add the berry puree to the yogurt and allow to spin, making a swirl coloured frozen yogurt.


Remove frozen yogurt from machine to a storage container and freeze frozen yogurt covered until serving.
