This low-fat and low-calorie vegetable soup recipe keeps you full, is packed with nutrients and makes the perfect winter warmer.

400ml chicken or vegetable stock

1 cup water

1 large potato, diced

2 carrots, sliced

2 stalks celery, diced

2 cans diced tomatoes

2 zucchinis, sliced

1 cup fresh corn kernels

salt and pepper to taste

1 teaspoon chili flakes, or to taste


Method

1. In a large stock pot, combine all the ingredients. Season with salt, pepper and chili flakes.


2. Bring to a boil, then simmer for 30 minutes or until all vegetables are tender.
