Have a fajita party tonight – just set out all the ingredients and let everyone make their own. The kids will love creating their own fajitas and you’ll love them because they’re low in fat.

Ingredients – makes 4

1 clove garlic, smashed

1/4 tsp crushed red pepper flakes

1 tsp chili powder

2 fl oz fresh lime juice

Salt and pepper

500g boneless skinless chicken breasts, cut lengthwise into thick strips

1 medium red onion, thinly sliced

1/2 red capsicum, thinly sliced

1/2 green capsicum, thinly sliced

1 avocado, thinly sliced

1 tsp olive oil

4 item wholemeal tortillas

Salsa and grated cheese, to serve


Method

1. In a medium-size glass bowl, combine garlic, red pepper flakes, chili powder, lime juice, salt and pepper; add chicken to bowl and stir well to coat. Cover and refrigerate for 1 hour.

2. Coat a large, heavy-bottomed nonstick pan with a little olive oil; heat over medium-high heat. Add onion and capsicums, and cook, stirring frequently, until crisp-tender, about 5 minutes; spoon vegetables into a small serving bowl and cover to keep warm.

3. Add a little more olive oil to same pan; heat over medium-high heat. Add chicken and any marinade remaining in bowl. Cook chicken until well-browned on bottom, about 3 minutes; flip chicken and cook until browned on second side, about 3 minutes more.

4. To serve, divide chicken strips on tortillas; top with onions, capsicum and avocado. Serve with salsa and grated cheese.
