These truffles are lovely and chocolatey but have only one tablespoon of cocoa powder, just fruit sugars for sweetness and next to no fat. They are a great sweet treat.
Makes: 35–40 truffles • Difficulty: easy • Takes: 10 minutes to prep
1 Serve: 1g total fat • 0.3g saturated fat • 143kJ (34 calories) • 6.2g carbohydrates • 0.6g protein • 0g fibre
¾ cup (90g) sultanas
¾ cup (135g) seeded dates
1 tablespoon unsweetened cocoa powder
1 tablespoon boiling water
½ cup (125ml) skim milk powder
¼ cup (25g) almond meal
¼ cup (25g) desiccated coconut
4 tablespoons chocolate sprinkles or extra desiccated coconut for coating
Place the sultanas and dates in a food processor and blend until finely chopped. Add the cocoa powder, boiling water, skim milk powder, almond meal and coconut and pulse until just combined.
The mixture should form a firm dough. Add a small amount of extra water if required to bring the dough together.
Take 1 teaspoon of mixture and roll into a ball. Repeat until all the mixture is used up. Toss the balls in the chocolate sprinkles or extra coconut to coat.
Store in an airtight container in the fridge for up to 2 weeks.
