This is the easiest chocolate self-saucing pudding recipe we’ve tried – and the best. Serve piping hot with a scoop of vanilla bean ice cream on top.


100g butter, softened

3/4 cup caster sugar

1 egg

1 teaspoon vanilla extract

1 1/4 cup plain flour

2 teaspoons baking powder

1 Tablespoon cocoa powder

2 cups boiling water


1/2 cup brown sugar

1/4 cup cocoa powder


1. Preheat oven to 180C. Beat butter, sugar, egg and vanilla in a bowl.

2. In another bowl, sift flour, baking powder and cocoa powder together. Fold into the butter mixture.

3. Spoon into a medium-size greased baking dish. Mixture together the sauce ingredients and sprinkle over the batter.

4. Carefully pour the boiling water over the batter. Bake for 30-35 minutes.
