Impress your friends and family with this classic mojito recipe which features a subtle twist of fresh pineapple infused with mint and lime. It is the perfect summer-time cocktail, especially if you’re lounging by the pool with a good book and even better company.
The recipe takes just 10 minutes to prepare, and makes 2 cocktails, so increase the number of measurements if you’re having more people over (or are just extra thirsty!).
1/2 cup pineapple (chopped)
10 mint leaves
2 tsp sugar
4 ounces white rum
Juice from 1/2 lime
Club soda to serve
Wedges of pineapple and mint leaves for garnish/presentation
- Place the pineapple, mint leaves, and sugar into a cocktail shaker and muddle with a wooden spoon for 20-30 seconds.
- Add the rum, lime juice, and ice to the mixture and shake until chilled.
- Strain the cocktail into 2 glasses filled with ice, then top-up with club soda.
- Garnish with mint leaves and pineapple wedges before serving.
