A delicious cocktail which combines the beautiful flavours of both fig and lemon into one summer-inspired drink. Personalise this fruity recipe by adding just some of your favourite fruits and garnishes, which could also include strawberries, blueberries and mint leaves.
Enjoy with a light dinner-meal, or even serve with cheese and crackers if you’re expecting friends over for drinks.

1/2 cup honey
1/2 cup water
1-2 sprigs fresh rosemary
4 tbsp of fresh fig puree
2 ounces vodka
Juice from 1 lemon
2 ounces rosemary honey syrup (for a sweeter drink)
1. To create the syrup, bring the water, honey and rosemary to a boil then remove and store in the fridge to chill.
2. For the rest of the cocktail, combine fig puree, lemon juice, vodka, and syrup into a cocktail shaker.
3. Fill 2 glasses with ice, and strain the mixture carefully over the ice cubes.
4. Top off the rest of the glass with soda water, and garnish with thyme, lemon peel, rosemary springs and fresh figs cut in half.
