Gluten Free Chocolate Chip Cookies

Gluten free chocolate chip cookies aren’t just for coelics – these crisp on the outside, soft in the inside biscuits are everyone’s favourite! For a delicious variation, substitute white chocolate and macadamia nuts.


Makes about 40


Ingredients:

125g butter or margarine

1255g brown sugar

1 egg

1 tsp vanilla

250g gluten free self raising flour

½ tsp xanthan gum

½ tsp bicarb soda

155g chocolate chips

65g walnuts, pecans or sultanas (optional)

Method:

Preheat oven to 180ºC. Line baking trays with baking paper.

Cream the butter or margarine, caster sugar and brown sugar until light and fluffy. Add egg and vanilla. Stir in flour, xanthan gum and bicarb soda. Add chocolate chips and nuts and mix well.

Drop rounded teaspoonfuls onto prepared baking trays (do not flatten). Bake for approximately 12 minutes or until browned. Cool slightly on the tray then remove to a wire cooling rack.
