Healthy dinner recipes: Grilled Zucchini Recipe Rolls

Make this tasty grilled zucchini recipe if you want to have a light meal to end your day, which is tasty and full of flavour. Zucchini is a fantastic vegetable to incorporate into your diet because it’s packed with fibre, low-cholesterol and has properties which fight against cancer and inflammation. Pair with some tasty goats cheese for a delicious meal which the whole family will love.


3 zucchini (about 1/2 pound each), sliced lengthwise into 1/4-inch slices

1 tbsp olive oil

1/8 tsp salt

Pinch freshly ground black pepper

1 1/2 ounces reduced-fat soft goat’s cheese

1 tbsp freshly minced parsley leaves

1/2 tsp lemon juice

2 cups baby spinach leaves

1/3 cup basil leaves


  1. Brushes the slices of zucchini with oil on both sides, then season with salt and pepper. Place on a grill pan for 4 minutes on each side, or until tender.
  2. Combine the goat cheese, parsley leaves and lemon juice into a small bowl and mix well ith a fork.
  3. Put 1/2 teaspoon of the mixture onto the end of the zucchini slice, then top off with spinach and basil leaves. Roll up the zucchini, then place seam-side down onto the platter.
