4 tomatoes (peeled, seeded and diced)
4 cups tomato juice
14 leaves fresh basil
1 cup heavy whipping cream
1/2 cup butter
Salt and pepper to taste
- Add the tomatoes and tomato juice in a large pot over medium heat. Allow the mixture to simmer for 30 minutes, before adding the basil leaves.
- Stir in the heavy cream and 1/2 cup of butter, then season with salt and pepper to your liking. Keep stirring until the butter has completely melted. Serve with a side of toasted bread.
