Karen Martini’s Secret Squirrel Bolognese with Macaroni

Serves 4 – 6


120mls extra virgin olive oil

250gms beef mince

250gms Italian style pork sausage meat removed from the skin

1 large brown onion, finely diced

4 cloves of garlic, finely diced

8 sprigs of thyme, stripped

3 celery stalks, finely diced

2 medium carrots, finely diced

3 tbs Ardmona® tomato paste

salt and pepper

1 tbs sugar

1 x 410g can Ardmona® tomato puree

1 x 810g can Ardmona® whole tomatoes

2 medium zucchini, diced

200mls water

grated parmesan cheese

macaroni or your favourite pasta


In a large wide pan, heat half the oil. Sauté the mince and sausage meat until brown. Remove from pan and set aside.

In the same pan heat the rest of the oil. Add onion, garlic and thyme. Cook for 3 minutes before adding celery and carrot. Cook over a medium heat, stirring occasionally until soft and golden for 15 – 20 minutes. Add the meats and tomato paste back to pan. Season. Add sugar, tomato puree, whole tomatoes, zucchini and water. Bring to simmer. Cook for 40 minutes over medium to low heat.

Meanwhile cook your pasta. Spoon over bolognaise and top with grated parmesan.
