These delicious vegetable rice paper rolls make a colourful and refreshing lunch. For heartier rolls, you can add slices of baked tofu, roast turkey or leftover baked salmon. Get the kids wrapping with you!

Makes: 8 rolls


16 round rice paper wrappers

6 spring onions, thinly sliced

2 carrots, shredded

1 beetroot, peeled and shredded

Handful baby spinach leaves

Handful snow peas, thinly sliced


1. Dip 1 rice paper wrapped into a bowl of warm water until moistened all over. Remove and let water drip back into bowl.

2. Please wrapped on a large plate. Arrange lines of vegetables in the centre of the wrapped.

3. Fold half the wrapper over the fillings, fold in the top and bottom, then roll up the wrapper securely.

4. Repeat until all the wraps are used. Serve with sweet chili dipping sauce.
