With Mother’s Day approaching this weekend, it’s an excuse to treat your loved one to a luxurious breakfast in bed. This simple home made muesli recipe is low on sugar, doesn’t require bread and is the perfect healthy treat that anyone will enjoy. Round up all the necessary ingredients including seasonal fruit for an extra special meal.

Homemade Muesli With Fruit

Ingredients

1 cup rye flakes

1.5 cups rolled oats

1/2 cup wheat bran

1/2 cups currants, apricots, or dates

1/2 cup hazelnuts

1/4 cup pumpkin seeds

1/2 teaspoon flax seeds

1/2 teaspoon cinnamon

1/2 cup yoghurt

1 teaspoon honey

Method

  1. Preheat the oven to 180°C or 160°C for fan forced. Lay hazelnuts on a rimmed baking sheet and toast until fragrant, about 5-7 minutes. Remove from the oven and allow to cool just a few minutes, then remove the skins. Set skinned hazelnuts on a cutting board and roughly chop.
  2. Spread the rye flakes and rolled oats onto another baking sheet. Bake for about 12-15 minutes, stirring two or three times to prevent burning.
  3. Scrape the toasted and chopped hazelnuts, seeds and grains into a large serving bowl and add the wheat bran and dried cherries. Mix together. Serve over yoghurt drizzled with honey. Store leftovers in an airtight container for future use.
