Your beautiful new cookbook is called Favourites. How hard is it choosing favourites amongst such an amazing collection of recipes?
‘Favourites’, my latest cookbook published by Hardie Grant, is filled with my favourite recipes. ‘Favourites’ contains recipes I use over and over again because my family, friends and visitors like them and ask for them again and again.
Have you always loved cooking or did it grow on you?
I’ve always loved cooking, and that love encouraged me to study at technical, trade, and professional levels, to read, travel and learn from the best cooks all over the world.
What’s one recipe that every home cook should master?
For Anglo-Saxons, Australians master something simple like scones or pikelets. Have jam (raspberry or strawberry) in the pantry, butter or cream in the fridge, tea in the tea caddy and you can always welcome visitors and family in the best way.
Your food writing is as wonderful as your recipes. Which other food writers do you enjoy reading and cooking from yourself?
Elizabeth David for her Mediterranean cooking – ‘An omelette and glass of wine’; Catherine brown, a Scottish author ‘A Year in a Scot’s Kitchen; M.K. Fisher, an American writer on American, French traditions, translation of Savarin’s ‘The Philosophy of Taste’; Marcella Hazan, Italian, ‘Marcella’s Kitchen’.

Traditional – Christmas Day Dinner – recipes from Margaret Fulton Christmas, welcome champagne with gravlax and blinis, Roast Turkey with all the trimmings, Guinness baked ham on sideboard – salads and for a change, a brilliant Cherry Pavlova – all cooked in my dependable St George Appliances oven.
