Zucchini is rich in Vitamin C and Manganese – both of which help build your immunity – and is also great for your eyesight. Raw vegetables, especially zucchini, has a high water content and is easy to digest, making it great for weightloss. This raw zucchini salad recipe doesn’t require any cooking, and is a tasty alternative to leafy green salads.

Ingredients

1/3 cup extra-virgin olive oil

2 tbsp fresh lemon juice

2 medium zucchini, washed and ends removed

1/4 cup fresh basil, roughly chopped

1/4 cup fresh mint leaves, roughly chopped

1/4 cup pine nuts, toasted

A wedge of parmesan cheese

Salt and pepper

Method

  1. For the dressing: whisk oil, lemon juice, 1 teaspoon salt, 1/2 teaspoon black pepper in small bowl. Set aside.
  2. Using vegetable peeler or V-slicer and working from top to bottom of each zucchini, shave zucchini into ribbons (about 1/2 inch wide and paper thin – like a ribbon!). Place ribbons in large bowl.
  3. Add basil, mint, toasted pine nuts, and dressing. Toss the salad, to ensure the dressing evenly coats the ingredients. Season to taste with salt and pepper. Using vegetable peeler or cheese grater, shave strips from Parmesan wedge over salad.
