Ingredients

¼ cup (20g) pine nuts
1 teaspoon curry powder (or to taste)
½ cup 97% fat-free mayonnaise
¼ cabbage thinly shredded
1 cup red capsicum diced
1 small onion finely diced
1 cup carrot grated
1 cup celery sliced
1 cup mushrooms sliced
1 small apple diced (skin on)
? cup sultanas
pepper to taste

Method

Spread pine nuts on a baking tray, place under grill until browned on both sides (be careful as they burn quickly), leave to cool. Stir curry powder into mayonnaise. In a large mixing bowl place all ingredients and mix together well. Refrigerate until required.
