20-Minute Dinner: Pita Pizzas

On the days when you just don’t have time to cook, pull out some pita breads and make pita pizza for dinner. Use whatever you have in the pantry or try these tasty topping ideas – get the kids to create their own pizzas too!

Ingredients

4 pita breads

1 cup passata or tomato pasta sauce

1 cup shredded mozzarella

1/2 cup grated Parmigiano Reggiano

Toppings

Ham and pineapple

4 slices ham off the bone, roughly chopped

4 rings canned pineapple, sliced into small wedges

1/2 teaspoon dried oregano

Margarita

Handful basil leaves

2 big or 6 small bocconcini, sliced thinly

Meatlovers

10 slices salami

2 rashers bacon, diced into bite-size pieces

4 slices prosciutto

1/2 cup leftover roast chicken, shredded

1 medium tomato, sliced

1. Heat the oven to 200° C.

2. Lay the pita breads on a baking tray lined with baking paper. Spread 1/3 cup of passata on each pita. Top with your chosen toppings. Sprinkle the mozzarella over the top, and finish with the grated Parmigiano Reggiano.

3. Bake for 10-15 minutes until the cheese has melted.
