Chocolate Meringue Strawberry Kisses

Valentine’s Day is synonymous with chocolate but it doesn’t mean you have to have a blow out. These feather light clouds of chocolate meringue are only 1 Weight Watchers ProPoint per serve and make the perfect Valentine’s Day treat.

“Valentine’s Day is the perfect opportunity to indulge and show your love, but if it happened every day it wouldn’t be so special, just like indulgent nights out become meaningless if you have them daily,” says Weight Watchers nutrition advisor and Accredited Practising Dietitian, Emma Stirling. “At Weight Watchers, no foods are off limits but it’s important that your one night ‘food fling’ doesn’t become a daily ‘food affair’.”

2 egg whites

½ cup (110g) caster sugar

1 tbs cocoa powder, sifted

2 tbs low-kilojoule strawberry jam

1. Preheat oven to 160°C or 140°C fan-forced. Line 2 baking trays with baking paper.

2. Using electric beaters, beat egg whites in a clean, dry bowl until soft peaks form. Gradually add sugar, 1 tablespoon ?at a time, beating well after each addition until sugar dissolves.

3. Mix cocoa with ¼ cup (60ml) meringue mixture in a medium bowl until well combined. Gently fold remaining meringue mixture into cocoa mixture. Spoon mixture into a piping bag fitted with a 1cm-round nozzle. Carefully pipe twenty-four 4cm-wide swirls of mixture, about 3cm apart, onto prepared trays. Bake for 20 minutes or until firm. Turn off oven. Leave meringues in oven, with door slightly ajar, until cool.

4. Spread jam over base of half of the meringues and sandwich with remaining meringues. Serve.

Tip: Once all of the sugar has been added the meringue should be light, fluffy and have a shiny appearance.

Quick tip: If you don’t have a piping bag, spoon the meringue into a plastic bag and cut a small hole in 1 corner. Twist and gently squeeze bag to force it out the hole.
