Detox Soup

Serves 6-8

2 teaspoons olive oil

1 onion, finely chopped

1 leek, white part only, finely sliced and washed

1/2 head of celery, chopped

2 cups (500ml) salt-reduced vegetable stock

3 cups (750ml) water

400g tin chopped tomatoes

1 carrot, cut into 1cm cubes

500g pumpkin, peeled and cut into 1cm cubes

1 head of broccoli, cut into florets and steamed

1. Gentle heat the oil in a large saucepan. Add the onion, leek and celery and saute over a low heat until soft, for about 5 minutes.

2. Add the stock, water, tomatoes, carrot and pumpkin. Bring to the boil, then reduce the heat and simmer for 10 minutes.

3. Top with the steamed broccoli and serve.
