Easy Peasy Pizzas

Serves 2


2 pieces Lebanese bread

6 tablespoons tomato passata

Freshly grated parmesan

Good-quality olive oil

Topping ideas

Smoked salmon, thinly sliced Spanish onion, capers, mascarpone

Goat’s cheese, bocconcini, Roquefort

Salami, olives, thinly sliced tomato, fresh basil leaves

Thinly sliced mushrooms, caramelised onion, fresh thyme, goat’s cheese

Sliced pancetta, eggs, fresh oregano leaves


1. Preheat oven to 220C. Place a pizza stone or baking tray in the oven while you prepare the pizzas.

2. Spread the tomato passata over the Lebanese bread. Generously top with your chosen toppings and finish with grated parmesan.

3. Bake in the oven for about 10 minutes, until the cheese has melted. Drizzle with olive oil. Serve with this crisp green salad.

Crisp Green Salad

A simple crisp green salad is all that’s needed here.


2 handfuls mixed salad leaves

1 avocado, diced

1 cucumber, sliced

Squeeze of lemon juice

Drizzle olive oil

Sea salt flakes


1.Toss the ingredients together just before serving. If preparing in advance squeeze a little extra lemon juice over the avocado to prevent it turning brown.
