Fresh Cherry And Sesame Salad

?Salads provide a fresh, healthy accompaniment to any meal but it is easy to fall into a rut of serving the same side salad day in, day out. Why not mix it up a and inject some originality into your trusty salad repertoire with this quick and easy dish!

1 cup of sugar snap peas

2 cups of fresh cherries

?3 tablespoons of white wine vinegar

2 tablespoons of balsamic vinegar

?1/2 teaspoon of sesame oil

?3/4 teaspoon of salt?

1/8 teaspoon of ground pepper

?1 cup of red radishes (cut into wedges)

?1/2 teaspoon of toasted sesame seeds

1/2 teaspoon of grated fresh ginger root

?1 medium cucumber halved, seeded and sliced)


1: Blanch the peas in boiling, salty water for at least a minute. Then, plunge them into icy cold water and drain.

2: Mix the cherries with the cucumber, peas and radishes.

3: To make the dressing, combine the remaining ingredients and blend it well.

4: Transfer the salad mix to a serving bowl and pour the dressing over the salad. Toss the salad well so that it coats evenly, and then refrigerate for at least an hour before serving.
