Dilmah Fruit Teas
Dilmah have recently announced their new fruit tea range. The flavours include Peach, Lemon, Strawberry and Blackcurrent. If the summer heat is too much, Dilmah recommends making a glass of ice tea: brew Dilmah fruit tea at double strengh using twice the tea or half the water. Allow to cool and pour into a large glass. Then simply add sugar syrup or alternatively use bees honey syrup to the cooling tea. Add ice cubes and top up with cold water and mix vigorously. If you have a cocktail shaker, fill with ice, pour tea in and shake for 10 seconds. Serve in a chilled glass and add a mint leaf to finish. RRP 10 pack $1.79

Layered Apple and Blueberry Dessert
Serves: 4
Preparation Time: 8 mins
Cooking Time: 4 mins

4 Royal Gala apples, peeled, cored and cut into wedges
1 Tbsp lemon juice
1 1/2 Tbsp caster sugar
100 g roughly chopped coconut cookies or other sweet biscuit
150 g blueberries
2 cup low-fat natural yoghurt
1 Tbsp honey

1. Place the wedges of apple in a microwave proof bowl and toss with the lemon juice and sugar. Cover and cook in the microwave on high for 5 minutes or until the apple is tender. Leave to cool.
2. Divide the cooked apple among 4 glasses or serving dishes. Sprinkle a layer of chopped coconut cookies on top of the apple mixture.
3. Next add a layer of blueberries, reserving about 20 for decoration. Spoon the yoghurt on top of the blueberries and smooth with the back of the spoon.
4. Drizzle over the honey and scatter with the reserved blueberries.

Low-fat natural yoghurt can be substituted with flavoured yoghurt or Greek style yoghurt. Variations might change nutritional information value.
