Healthy Banana Bread
Bananas are a terrific energy food and a great source of potassium, an essential mineral for maintaining normal blood pressure and heart function. This recipe gives you a stack of healthy ingredients, enough protein to help you power through your morning, and without the usual saturated fat of traditional banana bread.
Ingredients
480g mashed banana
120g agave nectar or pure maple syrup
120ml coconut or macadamia nut oil
1 tsp cinnamon
2 tsp baking powder
100g flax seeds, ground
200g almond meal
40g BSC ‘Body’ protein powder (Vanilla flavour) – available from Coles stores (see below)
Method
1. Preheat your oven to 170C/160C fan forced. Combine the mashed bananas, agave and oil. Add the cinnamon, baking powder, flax seed, almond meal and Body protein powder then mix through until combined.
2. Lightly oil a loaf tin and coat well with coconut around the sides and base, so that your banana bread won’t stick. Spoon the mix into the tin and smooth out. Top with a sliced banana.
3. Check the banana bread after 30 minutes and cover with foil if needed. Bake for approx 50 minutes to 1 hour until it’s cooked through. Allow to cool in the tin for about 1 hour. Enjoy!
