Hot Fudge Sundae With Homemade Brownie

Hot Fudge Sundae Moo Moo Style

Moo Moo restaurant in Brisbane has just launched their new summer menu, specifically designed for the ladies with lovely light summer mains – a great addition to this fine dining steak restaurant!

Serves 10

Fudge Sauce

1/2L cream

550g Brown Sugar

240gm Chocolate Buttons

120gm Butter

125gm Glucose

1 1/2 tsp vanilla

1/2 tsp salt

In a pot heat cream and sugar until dissolved.

Add chocolate, butter and glucose and then stir until smooth.

Bring mix to the boil.

Remove from heat and stir in vanilla and salt.

Allow to cool before serving.


375gm Unsalted Butter

400gm Dark Chocolate (70%)

300gm Caster Sugar

9 Eggs separated

75gm plain flour

Melt chocolate slowly.

Beat in the yolks and sugar.

Fold in chocolate then gently fold in flour.

Beat whites to a soft peak then carefully fold into chocolate.

(This recipe requires a gentle touch because there is not alot of flour to stabilise the brownie).

Pour mixture into a baking tray and bake at 160C for 45 minutes.

Cool before serving.

Sprinkle with honeycomb and serve with vanilla icecream and cherries.
