Italian Sourdough Turkey Burgers

Burgers need not be delegated to a guilty pleasure when made at home with turkey mince and packed with Italian flavours.

Serves: 4


500g turkey mince

1 cup fresh white breadcrumbs

1/3 cup finely grated parmesan

1 lemon, finely grated rind and 1 tablespoon lemon juice

2 tablespoons toasted pine nuts

1 bunch of basil, leaves removed

1 tablespoon olive oil

4 Italian sourdough rolls, split in half

8 baby cos lettuce leaves

1 cup semi-dried tomatoes, drained

2 buffalo mozzarella, torn into pieces


Preheat oven to 180°C. Combine mince, breadcrumbs, cheese, lemon rind, lemon juice and pine nuts. Roughly chop 1 cup of basil leaves and add to mince mixture. Season with salt and pepper.

Form mixture into 4 even portions, roll into balls and flatten into patties. Heat oil in a large non stick frying pan over medium heat. When hot add patties and cook for 3-4 minutes on each side or until golden. Transfer to a tray and place in oven. Cook for 10 minutes or until cooked through.

Put bread roll bases onto serving plates. Top with lettuce leaves, patties, semi dried tomatoes, mozzarella and remaining basil leaves. Stand bread roll top against burgers and serve.
