Leg Ham and Spicy Eggs

125g thinly sliced leg ham

4 crusty pieces of hot buttered toast

1 tbsp of butter

1 tsp of curry powder

1 small onion, finely sliced

4 eggs

? tsp of salt

? cup of orange juice

1 tbsp cream

1tbsp parsley, chopped

Freshly ground black pepper


  • Arrange leg ham slices on toast and keep warm.
  • Melt butter in a fry pan and add curry powder and onion, cooking until onion is tender.
  • Beat eggs with salt and pepper, orange juice, cream and chopped parsley. Pour into fry pan and cook, stirring frequently until softly scrambled.
  • Spoon onto ham.
