Make This Weekend: Best-Ever Pancakes

There’s nothing quite as indulgent as brunch, so start this weekend with perfect, fluffy pancakes, topped with strawberries and maple syrup. Serve with endless Mimosas (and the papers of course!).

Ingredients

4 eggs

1 1/2 cups self-raising flour

1 1/2 cups skim milk

1 Tbs butter or margarine

Sliced strawberries and maple syrup, to serve

Method

1. Whisk together the eggs, flour and skim milk. Heat a non-stick frypan over low heat. Melt a little of the butter or margarine.


2. Add 2 Tbs of pancake mixture to the pan, spreading quickly to form a circle.


3. When bubbles form on the surface, flip the pancake over and cook for another minute, until golden brown on the bottom.


4. Serve with strawberries and maple syrup.
