Mango Martini, POM Wonderful Pomegranate Syrup, Grapefruit, Chantilly Cream
Dah Lee, head chef and owner of Capital Grill has created a limited edition summer menu using POM Wonderful 100% Pomegranate Juice, including this delicious Mango Martini with Pomegranate Syrup, Grapefruit and Chantilly Cream. Try them at Capital Grill from December 2010 through February 2011.

Wonderful Variety of Pomegranate
20 grams POM Wonderful 100% Pomegranate Juice
In a bowl, mix 500ml pure cream with 100g caster sugar and the seeds of one vanilla pod. Pour this into a Foam Gun, insert gas, and shake a couple of times to aerate. Otherwise beat with a whisk until light and frothy.
Pomegranate frozen vodka syrup
Reduce 1.5L of POM Wonderful 100% Pomegranate Juice down by half in a large pan. Check the taste, it may need a little extra sugar. When cooled, mix with 30ml ice cold Russian Standard Vodka.
Dice the mango, and segment the ruby grapefruit.
Layer the grapefruit and mango in a martini cocktail glass and sprinkle over the pomegranate.
Pour over the pomegranate frozen vodka syrup, spoon the Chantilly cream on the top of the fruit and drizzle a few pomegranate arils on top.
