Matt Moran’s Granola With Stewed Rhubarb

One of Australia’s favourite and most iconic fundraising events, Australia’s Biggest Morning Tea, turns 20 this year. A small and simple concept – getting together over a cuppa – has since grown to something much bigger with over a million Australians getting involved each year.

Why not whip up Matt Moran’s delicious granola with stewed rhubarb as part of your Morning Tea?

Serves 4


440 g granola

280 ml almond milk

400 g rhubarb stalks

50g caster sugar

¼ pod of vanilla bean

½ lemon (juice)


1. ?Trim and peel the rhubarb stalks and roughly chop, place in a medium size saucepan and add the caster sugar, vanilla bean and lemon juice, simmer for 5 minutes stirring continuously. 

2. Leave aside until cool.??To serve, place the granola into a cereal bowl, pour the almond milk over it and spoon the stewed rhubarb on top.
