Meat Free Monday: Asian Ginger Garlic Noodles With Avocado

Ditch the takeaway and whip up a healthy stir fry of noodles in less than 15 minutes. For a twist, why not add more vegetables – it’s a delicious way of cleaning out the fridge.

Prep time: 10 minutes Cook time: 5 minutes

Serves: 4


560g Asian noodles

2 tsp sesame oil

2 tbsp vegetable oil

2 tbsp ginger, peeled and cut into thin strips

4 garlic cloves, sliced

2 tbsp light soy

2 tbsp oyster sauce

2 spring onions, sliced

2 avocados

½ sprig coriander leaf


1. Heat the sesame oil and vegetable oil in a wok or fry pan. Then add the ginger and garlic. Fry this gently, then add noodles and stir fry.

2. Cut the avocados in half, remove the seed and skin and cut flesh into chunks.

3. To the noodles in the wok, add the onion, avocado, soy and oyster sauces and stir fry for a further minute or until all ingredients are combined and hot. Make sure you do not overcook the avocado.

4. When ready, remove the noodles from the wok and garnish with coriander before serving.
