Meat-Free Mondays: Beetroot Dip With Lavosh

Tired of the same old boring dips to serve with veggies or chips? Try this low-fat and divine beetroot dip next time you’re entertaining – serve with poppy and sesame lavosh crisps for a healthy snack anytime.
Ingredients – serves 8
1 x 450g baby beetroot, drained, coursley chopped
250g Greek-style yoghurt
2 tbs fresh lemon juice
1 tsp ground cumin
1 tsp ground coriander
Salt and freshly ground black pepper

Method
1. Place ingredients in a small bowl
and stir until well combined.
2. Taste
and season with salt and pepper. Serve with lots of Kurrajong Kitchen
