Meat-Free Mondays: Roast Asparagus Pasta With Walnut Sauce

Ingredients – serves 2
250g pasta of your choice
1 bunch asparagus, woody stems discarded, sliced into 4cm pieces
1/2 cup walnut pieces
1 clove garlic
Squeeze of lemon
1/4 cup grated parmesan, plus more for serving
1. Preheat the oven to 225C. Cook the pasta in boiling salted water.
2. Meanwhile lay the asparagus in a single row on a baking tray and drizzle with olive oil and season with salt and pepper. Roast in the oven for 10 minutes.
3. Make the walnut sauce by blitzing the walnuts, garlic, squeeze of lemon, parmesan and a little olive oil in a food processor. Keep the sauce chunky or puree to a smooth paste. Season with salt and pepper.
4. Drain the pasta reserving 1/2 cup pasta cooking water. Add the walnut sauce to the pasta and stir to combine, then toss through the roast asparagus. If the sauce is too thick, add a little pasta cooking water. Divide the pasta onto plates and serve with extra parmesan cheese.
