Mother’s Day Cocktail: Champagne Punch

Got a few bottles of bubbly hiding in the fridge? Then you’ve got the basis for one of the easiest, most refreshing cocktails which make the perfect Mother’s Day drink, along with brunch!

1 cup raspberries

1 cup blueberries

1 lemon, squeezed

1 peach or nectarine, thinly sliced

1/3 cup simple syrup (half water, half sugar)

1 bottle champagne or other sparkling white wine


Method

1. In a pitcher or punch bowl, combine fruit, lemon juice and simple syrup.

2. Add the champagne or sparkling white wine and top with ice. Enjoy!
