Orange Vanilla Cupcakes With Vanilla Cream Cheese Frosting

October 10, 2011

This week we’re featuring our most popular recipes of all time, starting with these delectable orange cupcakes topped with an easy vanilla-scented cream cheese frosting.

Makes: 12

1 1/2 cups plain flour

3/4 teaspoon baking powder

Pinch of salt

125g butter, softened

1 teaspoon vanilla extract

1 cup caster sugar

2 eggs

1 teaspoon orange juice or 1/2 teaspoon orange essence

1/2 Tablespoon orange zest

3/4 cup milk

Vanilla Bean Cream Cheese Frosting

150g cream cheese, softened (don’t use extra light Philly, it’s too soft)

60g butter, slightly softened

1 teaspoon vanilla extract

1 cup icing sugar

1/2 vanilla pod, beans scraped out (keep the other half in the sugar bowl)

Note: These cupcakes have a subtle citrus flavour; if you prefer a stronger orange flavour increase the orange zest to 1 1/2 Tablespoons.

1. Preheat oven to 170C. Sift the flour, baking powder and salt.

2. Cream the butter until pale, add the sugar and beat until fluffy. Add eggs and continue mixing until combined. Stir through the vanilla extract, orange zest and orange juice/essence.

3. Add the milk and flour mixture in alternate amounts and beat on low speed until combined.

4. Spoon into cupcake liners until 2/3 full. Bake for 17-20 minutes, until a cake tester comes out clean.

5. Top with the frosting, and finish with a pretty cupcake decoration.

1. Beat the cream cheese and butter until completely smooth. Add the remaining ingredients and beat to combine.

2. Refrigerate until ready to frost the cupcakes.
