Pumpkin Soup Recipe
A SheSaid favourite, this pumpkin soup recipe comes from celebrity chef Marco Pierre White yet is so quick and easy to make!

Serves 8 Prep time: 15 minutes Cook time: 25 minutes.


2 tablespoons olive oil

2 kg pumpkin, diced

4 cups boiling water

3 Continental Chicken Stock Pots

1 cup grated Parmesan

1/2 cup thick cream

Heat olive oil, add pumpkin and cook for 10 minutes. Add boiling water and Continental Chicken Stock Pots, bring to the boil, cover and simmer for 10 minutes.

Add Parmesan and cream and cook for a further 1-2 minutes. Blend, then strain through a sieve for a fine finish or use a whisk for a chunkier result.

Serve with warm crusty bread.
