Sour Cherry Gin and Tonic Recipe

Give a classic gin and tonic cocktail some life with this recipe which makes it ideal for anything with a sweet-tooth. Why not add some of your favourite seasonal fruits to the mix – especially sour cherry which makes almost anything taste amazing! Don’t forget to add a splash of lime before serving.


1 cup sour cherries (or regular cherries), pitted

1/4 cup white granulated sugar

1/4 cup water

3 limes




  1. Combine the cherries, sugar and water over a saucepan on medium heat. Mash the cherries with a wooden spoon until they are consistent, then cover and bring the mixture to a simmer.
  2. Turn off the heat and bring the mixture down to room temperature by setting it aside.
  3. Once it’s cooled down, the mixture will thicken slightly. You’ll want to run it through a mesh sieve to remove any inconsistent bits.
  4. For each cocktail add 40ml of cherry syrup and 60ml of gin for each glass. Add a splash of lime juice, lots of ice and tonic water before serving.
