Feta, Hummus and Avocado Wraps Recipe

Looking for a healthy dinner recipe the entire family will enjoy? This yummy little creation brings together nutritious avocado, feta cheese, and hummus in a delightful little wrap – not to mention seasoned with red chilli flakes and cracked black pepper!

Ingredients

4 wholemeal wraps

2 avocados

200g hummus

4 diced jalapenos

60g feta cheese

Red chilli flakes

Cracked black pepper

Method

  1. Dice the jalapenos, and share give a generous serving on each wrap. Finish off with hummus over the top.
  2. Divide the avocado, sprinkle some feta cheese over the top, then add the pepper and chilli flakes.
  3. Fold each wrap over, then grill gently on each side until golden brown (you could also do this step before adding the filling).

Tasty Avocado Ice Cream Recipe

Are you head over heels for avocado? We’re talking about those who enjoy it with their eggs, salads, sandwiches and even in a green smoothie. Well, you’re going to love this homemade avocado ice cream which is packed with good fat for once!

Ingredients

4 avocados

2 limes

200g caster sugar

300ml thick cream

1 tsp vanilla extract

Method

  1. Combine the four avocados and lime juice into a food processor. Mix until you have a smooth puree.
  2. In another bowl, combine the sugar and cream with an electric mixer. Combine all of the ingredients together, then add the vanilla extract.
  3. Churn in an ice cream maker, then transfer into a small container. Freeze the mixture for up to 4 hours, or overnight.

Light Guacamole Salad Recipe

We aren’t the type to resist anything with avocado, so when this certain recipe came along, we just had to share it! The perfect, light meal which is loaded with greens, protein and natural fats, all of which are actually good for your body. Don’t forget to add in some tuna, egg or tofu for added texture.

Ingredients

1 red onion (sliced)

2 ripe avocados (cut into thick slices)

5 cherry tomatoes (sliced in half)

Coriander and mint leaves

3 tbsp of olive oil

Salt and pepper to season

Juice of 1 lime

Method

  1. Whisk together the lime juice and olive oil. If you prefer your meal on the spicy side, feel free to add some chilli flakes into the dressing.
  2. Slice the avocado, cherry tomatoes and red onion, then arrange them on each plate.
  3. Add the coriander and mint leaves, then toss the salad with the dressing.

Healthy Breakfast Recipes: Marmite Avocado Toast

Who doesn’t love avocado toast? Perfect as an easy breakfast, quick lunch or healthy afternoon snack, this avocado toast recipe comes drizzled with an addictive herb sauce and delicious savoury umami flavour from Marmite.

Preparation time: 5 minutes
Cook time: 2 minutes

Serves: 4

Ingredients

1/2 cup fresh parsley, chopped
2 tbs capers (optional)
1 clove garlic, peeled, crushed
1 tbs lemon juice
1/2 tsp mustard
50 ml extra virgin olive oil
4 slices whole grain brown bread
2 large avocadoes, peeled
Juice of 1 lemon
2 tbs Sanitarium Marmite

Method

1. Combine the parsley, capers, garlic, lemon juice and mustard in a food processor and process until finely chopped, but not smooth. Put in a serving bowl and set aside.

2. Toast each slice of bread under grill or in toaster. Spread each slice with Sanitarium Marmite

3. Cut avocado into slices and sprinkle with lemon juice. Arrange avocado slices over the Marmite toast. Spoon over herb and mustard sauce and serve immediately.

Tip: The herb sauce can be stored for up to a week in the fridge. Stir well before using and it pays to remove from fridge and bring to room temperature before serving.
