French Women Don’t Get Fat Magical Breakfast Cream Recipe

One of the most popular French Women Don’t Get Fat recipes, this Magical Breakfast Cream is everything you want for breakfast: tasty, healthy and ready in just a few minutes. It’s also a delicious way to get a serve of calcium.

Beware: this recipe is addictive. It’s also extremely easy and quick to make, and one can play and interchange so many ingredients. It is the perfect complete breakfast and will keep you from getting hungry until late lunch. Why do I call it Magical Breakfast Cream? Magical? Something that is a combination of tasty, easy, and so good for your well-being has to be magical, right?

Serves 1

Preparation Time: 10-15 Minutes

Ingredients 

1/3 cup yogurt
1 teaspoon flaxseed oil
1 to 2 tablespoons lemon juice
1 teaspoon honey (or to taste)
2 tablespoons (20g) finely ground cereal (with no added sugar such as Shredded Wheat)*
2 teaspoons (5g) finely ground walnuts*

Method

1. Mix yogurt and oil in a bowl. Add lemon juice and mix well then add the honey and mix well.  (It is important to add each ingredient one at a time, mixing well between additions to obtain a smooth, creamy texture.)

2. Add ground walnuts and cereal to the yogurt mixture and mix well.  Serve at once.

* You can finely grind the cereal and walnuts using a small food processor or mortar and pestle.

Mireille’s notes:
* You can do a week’s worth of grinding cereal/nut mixture and keep it refrigerated so in the morning it will take just an instant to mix together!

* Flaxseed oil is rich in Omega-3 fatty acids, have no fear, you will not taste the oil in the fine creamy blend.

* I use Shredded Wheat cereal made from whole grain wheat, but you could add other wholegrain cereals which contain no added sugar.

Easy Dinner Recipes: Clafoutis Provencal

This French baked vegetable and egg dish is one of our favourite French Women Don’t Get Fat easy dinner recipes by Mireille Guiliano. It’s a great way to use up those leftover vegetables lurking in your fridge, and is delicious hot, warm or room temperature.

To make this easy dinner even quicker, sauté your vegetables the night before and refrigerate them, then just whip up the egg ricotta batter, fold the veggies in and dinner is ready in 30 minutes!

We had cherry trees in our garden, and from the time I was eight, I got to climb the ladder (and some branches) and pick cherries. My little girlfriends and I would sometimes overeat the fresh cherries, but there was still enough to bring back to my mom, who used them to make a clafoutis, baking the fresh fruit in a custardy batter in a round baking dish. The curious name for this dessert comes from the verb clafir, ‘to fill up’, because you fill up the batter and mould with fruit, most commonly cherries. Clafoutis usually refers to a dessert preparation, but in Provence it can be a savoury yet still rich dish with cheese, eggs and bread – Mireille Guiliano.

Serves 4

Preparation Time: 20-25minutes 
Cooking Time: 35 minutes

Ingredients

2 tablespoons olive oil
1 small eggplant, cut into 1cm dice
1 yellow capsicum, seeded and cut into 1cm dice
salt and freshly ground pepper
1 slice bread, crusts removed
2 cloves garlic, peeled
225g ricotta
3 eggs
2 tablespoons finely shredded fresh basil leaves
50g black olives, pitted and halved
110g grated parmesan
butter, softened, for baking dish
fresh basil, for garnish

Method

1. Preheat the oven to 180ْ C.

2. Heat the olive oil over medium heat in a frying pan and sauté eggplant and capsicum until softened, about 6 minutes. Season to taste and set aside to cool.

3. In a food processor, combine bread, garlic, ricotta and eggs and blend until smooth.  Season with salt and pepper and using a spatula, fold in 1 tablespoon basil, the olives, parmesan, eggplant and capsicum.

4. Pour the mixture into a lightly buttered 21cm square baking dish and bake until lightly golden, 30 to 35 minutes.  Serve warm or at room temperature, garnished with basil.

Mireille Guiliano, author of French Women Don’t Get Fat, has a simple message for Australian women: you can be a healthy weight and still enjoy good food and the things you like.

The international bestselling author is renowned for inspiring women all around the world to lose weight without dieting. Mireille’s philosophy is about a balanced approach to life and wellbeing that doesn’t include extreme diet or exercise regimes.

“We spend so much time worrying about eating bad food that we forget about the enjoyment that comes with eating good food, and sharing it with family and friends. Everything is fine in moderation,” says Mireille.

Mireille’s healthy eating tips for Australian women:

1.    Start each day with a real breakfast.

2.    Introduce two servings of natural yogurt as a breakfast or snack food or dessert  – the protein will keep you fuller for longer.

3.    Enjoy milk, cheese or yogurt every day. Many people avoid these foods because they think they’re fattening – this is a mistake. Eating these foods as part of a balanced diet is not linked to weight gain.

4.    Stop dieting.

5.    Take the stairs and laugh more, it’s good for the waistline and for the soul.

6.    Never let yourself get too hungry or over eat.

7.    Good food isn’t pretentious. Don’t take yourself too seriously, and don’t let recipes intimidate you – they’re a guide not a formula.

8.    Cooking is slimming. Love is slimming. Happiness is slimming.

9.    Eat smaller amounts of more things, rather than bigger amounts of less things.

10.    Australians love their coffee, so take pleasure in the ritual of your morning latte or cappuccino.

11.    Choose and enjoy your weekend rewards, like your favourite dark chocolate rather than worry about eating ‘bad’ food.

12.    Explore Australia’s great outdoors with regular physical movement. Choose things you can do in street clothes like a daily walk or a leisurely bike ride.

13.    Avoid anything that demands too much effort for too little pleasure.

14.    Eat and serve what’s in season. With the Australian summer in sight, enjoy fresh fruits and vegetables aplenty.

15.    Don’t save Champagne for special occasions, being in good company is reason enough.
