Mums Are Appreciated: Fact Or Fiction?

Making sure that your family thrives is not an easy job and it’s one that doesn’t come with bells and whistles. Mums don’t get paid for their hard work and they don’t get nominated for awards, but are they at least being appreciated by their families?

Australia Post has just released its Mother’s Day Survey results and nearly 80 per cent of Australians say that mums are the most appreciated member of the family. However, almost 40 per cent have forgotten to buy a Mother’s Day gift at least once, with 9.1 per cent admitting that they forget to buy a gift every year. So much for showing appreciation!

Australians are just as likely to forget to buy a Mother’s Day card, also – 42.6 per cent of all respondents have forgotten to buy a card at least once and 10.5 per cent forget every year. Those who remember to buy gifts often don’t put a lot of effort into it, either, with 43.9 per cent admitting that they’ve bought a gift voucher instead of a thoughtful gift, while 23.4 per cent say they’ve sent the mum in their life to buy her own gift. Some people (5.4 per cent!) admitted to buying a washing basket – that would have to go on the worst ever Mother’s Day gifts list.

Are these numbers making you depressed? Here are some better ways to show your appreciations to the mum in your life:

  • Put some effort into figuring out what she’d like and shop early.
  • Tell her how much you love her and what you appreciate about her. If you have young kids, ask them to list the things they love about Mum and turn their answers into a card, artwork or a video.
  • Spend time with her on Mother’s Day, but also give her some time to herself.

Showing mums how much we appreciate them doesn’t have to be difficult or expensive. It just takes some thought and a loving heart.

Mother’s Day Eats: Poached Eggs, Avocado And Feta Smash

Nothing says “I love you” more than going that extra mile, so in the lead up to Mother’s Day this Sunday, we’re providing you with some of the most delicious recipes to spoil hers truly with.

This cafe style poached eggs, avocado and feta smash is the ultimate breakfast in bed recipe. Packed full of healthy fats and protein, it’s guilt-free, simple to whip up and tastes so delicious you’d mistake it for being delivered from the menu of your favourite eating spot.

Serves 4

Ingredients

1 large ripe avocado

1 tbsp lemon juice

60g crumbled feta cheese, goat or cow milk

2 tbsp chopped parsley

1 tbsp chopped dill

100g cherry tomatoes, chopped

8 eggs

1 tbsp white vinegar

2 thick slices sourdough bread

Method

1. To make the smash, place avocado halves in a bowl and fork through to create a rustic mash.

2. Add lemon juice, crumbled feta, chopped parsley, dill and chopped cherry tomato. Mix well.

3. For the poached eggs, bring a medium shallow saucepan of water and vinegar to the boil. Break egg into a small dish.

4. Reduce the heat and bring the water to a simmer. Carefully slide in the egg.

5. Repeat this process with remaining eggs.

6. Allow 3-4 minutes for poached eggs with firm whites and soft runny yolks. Cook longer for a firmer egg.

7. Remove with a slotted spoon, rest on a paper towel to absorb any excess water.

8. To serve, smear smash on toasted sourdough and top with two poached eggs.

Mother’s Day Eats: Chilled Mulled Wine Recipe

Mulled wine is a traditional drink that can be served hot or cold, therefore it’s a great addition to any autumn barbecue or family get together. If you you’re looking to amp up the intensity of this drink, you could try adding some cardomom or ginger to the mix. Be careful not to over spice, however!

Ingredients

55g (1/4 cup) caster sugar

1 orange, quartered, each quarter thinly sliced crossways

10 whole dried cloves (dried flower bud)

2 x 7cm cinnamon sticks

1 vanilla pod, split

2 tablespoons Cointreau liqueur

8 strawberries, hulled, washed, quartered Ice, to serve

Method

  1. Combine wine, sugar, orange, cloves, cinnamon and vanilla in a medium saucepan over medium heat.
  2. Cook, stirring, for 2 minutes or until sugar dissolves. Bring to the boil, then remove from heat and set aside for 30 minutes to infuse.
  3. Add Cointreau to the wine mixture and stir to combine. Transfer to a jug and place in the fridge for 2 hours to chill.
  4. Add strawberries to the wine mixture. Divide ice among serving glasses, then pour over mulled wine and serve immediately.

Mother’s Day Eats: Grilled Figs And Honey Ice-Cream Recipe

This grilled figs with honey ice-cream recipe – created by award-winning chef Guillaume Brahimi – is the perfect Autumn dessert to follow any Mother’s Day lunch or dinner. With a mixture of hot and cold components including a creamy homemade macadamia ice-cream (drool), it’s sure to be a winner among sweet tooth’s and mum’s alike.

Serves 2

Ingredients

6 figs (cut in half)

75 gm sugar

75 gm macadamia nuts

Honey ice cream

250 gm egg yolks

140 sugar

500 ml cream

500 ml milk

60 honey

Method

  1. Pre-heat oven to 170 degrees. Place macadamia nuts in a baking tray, when nuts are golden remove from oven.
  2. Place the sugar in wok pan on medium heat. When the sugar starts to caramelise, add the nuts. Coat the nuts, then remove and place in a lined tray to cool. When cold, cut the nuts into pieces.
  3. Place milk, cream and honey into a pot. Bring to the boil and then reduce to a simmer.
  4. Place yolks and sugar in a bowl and whisk to thick sabayon. Pour the sabayon into the milk and cream, cook for 1 minute remove and chill.
  5. Churn ice-cream.
  6. Place grill pan on heat, add a little butter and figs flesh side down cook for 2 minutes and remove.
  7. To serve, place figs on plate and finish with honey ice-cream and praline.

Serves 2

Ingredients

1 tbsp oil

1 small onion, sliced

1 chorizo sausage, diced

150 cherry tomatoes

1/2 cup basil leaves, torn

1/2 cup parsley, chopped

100g Persian feta, crumbled

6 eggs

Extra virgin olive oil to drizzle

1/2 lemon, juice

Method

  1. Preheat your grill, so it’s nice and hot.
  2. Heat the oil in a 20cm non-stick fry pan. Add the onion, fry gently for 3 minutes until soft.
  3. Add cubed chorizo (the chorizo will sizzle, releasing spices and oils).
  4. Add the tomatoes and basil, cook for another 1 minute. Remove from the pan and set aside.
  5. Mix the eggs together with a fork, season.
  6. Return the pan to the heat, when hot, pour in the beaten egg. Swirl the egg mix with the fork for 30 seconds, then scatter in the chorizo mix along with the cheese and parsley.
  7. Place the pan under the grill, until the omelette is golden brown.
  8. To serve, add a drizzle of extra virgin olive oil and squeeze of lemon.

Mother’s Day Eats: Asado Style Beef Ribs Recipe

Nothing says “I love you” more than going that extra mile, so in the lead up to Mother’s Day this Sunday, we’re providing you with some of the most delicious recipes to spoil hers truly with.

If you’re planning a barbecue lunch or dinner, this beef ribs recipe by Julian Wu will go down a treat. The meat is marinated in a fresh homemade chimichurri sauce, so bare in mind that you will need to do a little preparation the night before. We think mum’s worth the effort, though!

Serves 6-8

Ingredients

3 kg beef short ribs cut into 5cm lengths

Brine (6 tablespoons salt dissolved in 1 litre of water)

Chimichurri

1 bunch flat leaved parsley, stems removed

6 cloves garlic, peeled

1 cup olive oil

½ cup lemon juice

1 tsp salt

1 tsp black pepper

½ tsp chili flakes

Method

  1. Firstly, the night before you cook prepare the chimichurri.
  2. Combine ingredients and puree them in a blender or food processor. This should make approximately 2 cups of chimicurri. Set aside 1 cup to serve with the cooked ribs, and use the remaining cut to marinate the ribs. Make sure they are well covered and refrigerate overnight.
  3. When you are about to cook, take the ribs out of the refrigerator and season them with black pepper – let them reach room temperature while you prepare the coals for the barbecue.
  4. When the coals are ready, place the ribs on the hottest part of the grill and sear them on one side until they are nicely browned. Turn and baste the ribs with the brine and grill until the other side is browned too.
  5. Move the ribs to a cooler part of the grill and continue to turn and baste the ribs frequently until they are done. This should take between and 16-20 minutes.
  6. Serve the grilled ribs with the reserved chimichurri sauce, a green salad and a hearty red wine.

How To Make a Cupcake Bouquet For Mother’s Day

Flowers and sweets are probably the two most common and most popular gifts mothers receive on Mother’s Day, so why not combine both by making a cupcake bouquet? Don’t worry, it sounds much more difficult than it is. But at the same time, a cupcake bouquet is so impressive, it will guarantee you to stay your mum’s favourite child.

So, what do you need in order to make a cupcake bouquet? Cupcakes, of course! Bake them yourself, please, instead of buying them from the supermarket. Your mother will be proud. If you want your cupcakes to look like actual flowers, check out this tutorial on how to pipe the frosting to make it look like roses.

Besides cupcakes, you’ll need a pretty flower pot, a styrofoam ball which sits on top of it, and some toothpicks. Make sure your cupcakes are cooled down, or even better, refrigerate them for a few hours before making the bouquet – warm cake may be too soft and therefore slide off the toothpicks.

Put the styrofoam ball in the flower pot and place toothpicks all over the ball using two toothpicks per cupcake. Make sure that the toothpicks are angled slightly upright on the sides, so that the cupcakes won’t slide down. If your cupcakes are on the larger side, use three or four toothpicks per cupcake.

Then, place the cupcakes on the toothpick pairs until the styrofoam ball is mostly covered. To fill the small gaps in between cupcakes, you can either use real flowers or twigs, or you can use some green tissue paper as fake leaves. Crunch it up slightly and glue it to the exposed parts of the ball.

That’s it! Tie a nice ribbon around the pot and surprise your mum with this creative and delicious Mother’s Day gift this year.

5 Gifts Mums Don’t Want For Mother’s Day

I was window-shopping when this sign caught my attention: “LEGO books inside. Shop early for Mother’s Day”. Really? What mum would want a LEGO book for Mother’s Day? And to think about it, someone who’s struggling to come up with great gift idea will see the sign and would walk in to buy what’s on offer. Don’t fall for it!

Here are some things that no mum would want for Mother’s day, no matter how much merchants might want you to believe otherwise.

1. Things that the kids will love more than the mum

LEGO books, craft packs, or other items that are likely to catch the kids attention will probably buy the mum some peace and quiet, but ultimately, they are not for her. And even though the peace and quiet may not happen – the kids will insist that mum plays, too. It’s her gift after all, isn’t it?

2. Parenting books

As mums, we already spend too much time in the motherguilt zone. We don’t need another expert telling us that we should be doing things differently from what we’re currently doing. Not on Mother’s Day!

3. Household items

A new clothes line or a slow cooker have their use, but they’re just that – useful. On Mother’s Day we want to feel special. Something to help me with the household chores doesn’t make me feel special.

4. A jam-packed day

While a well-chosen family activity can be joyful and energising, a day full of activities sounds like a nightmare, even if I’d love to do each of the activities on its own. So if you’re an over-planner, make an effort to keep it down and give the mum in your life lots of time and space to enjoy her day.

5. Nothing

Even if the mum in your life says that Mother’s Day is not important to her, she wants to feel loved and appreciated (every day, not just on Mother’s Day). Ignoring the day completely definitely doesn’t count as love and appreciation.

I had a wondrous time – so much so, I didn’t want it to end! And my beauty therapist, who had 15 years experience, was one of the best I’ve ever had. Both knowledgeable and personable, she was also a damn good masseuse.

Luckily for me, there was still some added extras to enjoy: a luxury signature shampoo and blow dry, Curtis Collection make-up touch up and Devonshire tea or glass of bubbles with nibbles. Naturally, I opted for the bubbles and took the opportunity to take in the amazing balcony view at Harbour Day Spa (pictured). Ah, the serenity.

Mother’s Day Gift Idea: Healthy Breakfast

With Mother’s Day approaching this weekend, it’s an excuse to treat your loved one to a luxurious breakfast in bed. This simple home made muesli recipe is low on sugar, doesn’t require bread and is the perfect healthy treat that anyone will enjoy. Round up all the necessary ingredients including seasonal fruit for an extra special meal.

Homemade Muesli With Fruit

Ingredients

1 cup rye flakes

1.5 cups rolled oats

1/2 cup wheat bran

1/2 cups currants, apricots, or dates

1/2 cup hazelnuts

1/4 cup pumpkin seeds

1/2 teaspoon flax seeds

1/2 teaspoon cinnamon

1/2 cup yoghurt

1 teaspoon honey

Method

  1. Preheat the oven to 180°C or 160°C for fan forced. Lay hazelnuts on a rimmed baking sheet and toast until fragrant, about 5-7 minutes. Remove from the oven and allow to cool just a few minutes, then remove the skins. Set skinned hazelnuts on a cutting board and roughly chop.
  2. Spread the rye flakes and rolled oats onto another baking sheet. Bake for about 12-15 minutes, stirring two or three times to prevent burning.
  3. Scrape the toasted and chopped hazelnuts, seeds and grains into a large serving bowl and add the wheat bran and dried cherries. Mix together. Serve over yoghurt drizzled with honey. Store leftovers in an airtight container for future use.
