Healthy Seafood Paella Recipe

Nothing beats a deliciously hearty paella recipe packed with some of your favourite seafood, to be shared with friends and family.

While a meal like this may seem difficult for beginners, we have tracked down the perfect recipe which takes no longer than 30 minutes to create from scratch.

Serve with a sweet white wine, or even a fruity sangria if you’re feeling festive!

Serves 8

Ingredients

4 cups chicken stock

1/2 tsp saffron threads

1/4 cup olive oil

1 medium yellow onion (diced)

2 cloves garlic

1/2 red bell pepper (diced)

2 ripe tomatoes (peeled and diced)

2 cips arborio rice

Salt

8 ounces mussels

8 ounces littleneck clams

8 ounces prawn

2 tbsp finely chopped parsley

2 medium lemons (sliced)

Method

  1. Combine the chicken stock and saffron threads into a pot of hot water, and let it simmer.
  2. Heat a large pan of medium-heat, and add the olive oil, onion, garlic, and red bell pepper. Cook until the entire mixture is soft, then add the diced tomatoes and cook for an additional 2 minutes. Add the rice, and keep stirring the entire mixture.
  3. Combine the warm broth and cook until it reaches a light boil. Cook the rice uncovered for an extra 10 minutes before adding the mussels, clams, and prawns with an aluminium cover over the pan.
  4. Turn the heat off, and let the entire mixture simmer for a few more minutes – this is essential since all the flavours will be extra rich and tasty.

Turkey And Chorizo Paella

Celebrity chef Miguel Maestre adds a modern twist to a traditional paella, marinating turkey in sherry and juniper. Ideal served with chilled sangria and shared amongst friends for a leisurely weekend lunch.

 

Serves: 4

Ingredients

Sherry and juniper marinade

60ml (2fl oz) olive oil

60ml (2fl oz) dry sherry

1 teaspoon juniper berries, lightly crushed

1 teaspoon black peppercorns

1 teaspoon salt flakes

1 head garlic, roughly chopped

1/2 cup frozen peas

6 fresh Ingham turkey wings

2 tablespoons olive oil

2 chorizos

1 morcilla sausage

1 bunch of thyme, leaves only

1 bunch of marjoram, chopped

pinch of dry oregano

10 garlic cloves, thinly sliced

60ml (2fl oz) dry sherry

Pinch of saffron threads

100g (3½oz) blanched almonds, toasted

200g (7oz) diced red capsicum

3cups chicken stock

salt and pepper

400g (13oz) Calasparra rice (use aborio rice if unavailable)

Method

1. To make the sherry and juniper marinade, combine all ingredients in a large bowl. Add turkey wings. Toss to combine. Refrigerate, covered, overnight.

2. The next day, drain turkey wings and pat dry with absorbent paper. Discard marinade.

3. Heat half the oil in a large heavy-based frying pan or 30cm paella pan
over high heat. Cook the turkey wings, chorizo and morcilla, for about 2 minutes until golden brown. Remove and set aside. Reduce heat.

4. Add remaining oil to same pan. Add thyme, marjoram, oregano and garlic. Cook, stirring, for 2 minutes – be careful not to burn the garlic.

5. Stir in sherry, saffron, almonds, capsicum and stock. Season with salt and pepper. Bring to a simmer. Add turkey wings, chorizo and morcilla. Sprinkle rice evenly into pan.

6. Cook, over medium heat, without stirring for about 25 minutes or until stock has been absorbed and rice is almost tender. Reduce heat to low and cook for a further 3 minutes to form a nice ‘soccarrada’ (a crust on the bottom of the pan). If the hot plate is not as big as pan, move the pan around a little during cooking to ensure even heat distribution. Blanch peas and scatter over the top at the end of cooking.

Tip: Do not use frozen turkey meat as it will be tough – fresh is best.
