Tequila and Lime Marinated Steak Recipe

Cooking with alcohol is one of the best ways to bring out the flavours of your food, without going too over-the-top.

One of our favourite ways to infuse a classic steak dish is with a splash of tequila; which smells and tastes absolutely delicious. If you want to know exactly how to make this dish at home, then just keep reading!

Serves 4

Ingredients

2 tbsp tequila

1 tbsp soy sauce

1 jalapeno

1 tbsp Worcestershire sauce

2 green onions (sliced)

2 garlic cloves

1 tbsp brown sugar

1 tsp ground black pepper

1 1/2 pounds steak

1/2 teaspoon salt

1 lime (sliced in wedges)

Method

  1. Combine the tequila, Worcestershire sauce, soy sauce, green onion, garlic onions, brown sugar, jalapeno, and black pepper into a re-sealable bag. Add the steak, then let it marinade in the fridge overnight.
  2. Sprinkle both sides with salt and pepper, then cook on a hot grill for 3-4 minutes on each side.
  3. Once the steak is done, squeeze some more lime over the meat, and serve with fresh parsley.

TGIF: Champagne Margarita Recipe

Ever heard of a champagne margarita before? This delicious cocktail brings the best of both worlds into one drink which is perfect for the holiday season.

Our recipe requires only 7 simple ingredients for yummy drink this summer season, which takes less than 5 minutes to prepare.

Ingredients

4 tbsp sweetened lime juice

60ml white tequila

60ml triple sec

1 tbsp fresh squeezed lime juice

180ml champagne

1 tbsp raw sugar

1 tbsp granulated sugar

Lime wedges (optional)

Method

  1. Start with the sugared rims, and combine the raw and granulated sugar into a shallow dish. Wet each rim of the glass with a lime wedge, and dip into the sugar to coat.
  2. For the margaritas, fill a cocktail shaker with ice and add the sweetened lime juice, tequila, triple sec, fresh lime juice, and champagne. Gently shake until the mixture has combined.
  3. Strain in the glasses, and garnish with a wedge before serving.

5 Ways To Serve Tequila (Without The Lick, Sip, Suck)

You don’t have to be in Mexico to enjoy tequila a variety of different ways. Bypass the standard shots at the bar with our list of five ways to celebrate tequila properly, thanks to Tequila Blu.

Spiked Mexican hot chocolate
This spicy hot chocolate gets its kick from the Oaxacan chocolate that is traditionally used to make it and with the inclusion of agave nectar and fine tequila, like Tequila Blu, this drink screams with the taste of Mexico!

Serves 2

Ingredients

3 cups milk of choice

1 ½ bars of good quality, spicy chocolate

6 tbsp cocoa powder

2 tbsp agave nectar

1 ½ shots Tequila Blu

½ heavy whipping cream or ½ cup water

Cayenne pepper to taste (optional)

Method

  1. Warm the milk in a saucepan on the stove.
  2. Add chocolate, cocoa and agave nectar and whisk to melt chocolate.
  3. Season with cayenne pepper.
  4. Pour into two large mugs, top with whipped cream and garnish with ground cinnamon.

Tequila and orange
When you think of drinking straight tequila you might jump to thoughts of lime and salt, a seedy nightclub and a bad hangover… but it doesn’t always have to be that way. Why not try something different like the Tequila Blu Citrus Harvest?

Ingredients

45 ml Tequila Blu

Slice of fresh orange

Vanilla Sugar

Or try making a tequila and orange granita:

Ingredients

1 ¼ cups water

½ cup sugar

juice of 7 oranges

6 tablespoons of Tequila Blu

Method

  1. Combine 1 ¼ cups water, ½ cup sugar (or agave nectar for a more Mexican twist), juice of 7 oranges (2 1/3 cups approx.), and 6 tablespoons of Tequila Blu, stirring until sugar is dissolved.
  2. Pour into a baking pan and place in freezer until frozen, and then use a fork to break up the ice before re-freezing until solid. Continue to break up ice crystals with a fork every 20 minutes until the mix becomes slushy. Spoon into glasses and garnish with orange slices.

Margarita ice cream

Ingredients

125 ml lime juice

2 tablespoons tequila

3 tablespoons Cointreau (or triple sec)

150 grams icing sugar

500 ml double cream

Method

  1. Pour the liquid ingredients (lime juice, tequila and Cointreau) into a bowl and stir in sugar until it is dissolved.
  2. Add cream, whip til it becomes think and smooth but not stiff!
  3. Place in an airtight container and freeze overnight.

Tequila poured over sorbet

This one is an easy twist on an old favourite.
Place a few scoops of lemon, lime or berry sorbet in a glass with a salted or sugar coated rim, and drizzle with tequila for a deconstructed margarita.

Edible strawberry and tequila bites

Ingredients

Large strawberries (amount required depends on how many shots you plan on making)

1 x packet of jelly (choose a flavour that will go well with strawberries)

Tequila Blu

Method

  1. Prepare your strawberry cups first.
  2. Chop off the top/green part of the strawberries and hollow out to create a cup or mould. If your strawberries are large enough you may like to cut off the bottom, just enough to make the strawberries able to stand up on their own but be careful not to cut through to the hollowed out middle.
  3. Follow instructions on the packet to make your jelly, substituting ¾ cup of water with tequila. We suggest preparing the jelly in a jug so it is easy to pour into the strawberry cups.
  4. Once you have made the jelly liquid, fill the strawberry cups and place in the fridge until jelly is set. If your strawberries aren’t able to stand up, an empty egg carton will make a great tray. You can experiment using oranges and other fruit too!

5 Ways to Cook with Tequila

When you think of tequila, you’re probably thinking…margarita! But did you know you can also cook with tequila, from marinades to the best guacamole you’ll ever have. Here are a few delicious ways you can mix up your culinary creations with Tequila Blu.

Use it as a marinade for steak or lamb
Add a bit of oomph to your barbeque. Simply mix lime juice, olive oil, soy sauce, garlic and herbs with a generous splash of Tequila Blu and let your meat marinate. Cook over a hot barbeque or grill.

Top your grilled corn with tequila lime butter
Just add a dash of Tequila Blu, lime juice, a pinch of cayenne pepper and salt to softened butter. Mix well and brush over freshly grilled corn cobs. Top with cheddar cheese if you’re feeling naughty!

Try guacamole with a twist
Add a healthy shot of Tequila Blu to your favourite chunky guacamole recipe. Enjoy with tortilla chips, or add as a side to a tasty dish of nachos.

Drunken fruit salad
This makes for a refreshing dessert. All you need to do is chop up your favourite seasonal fruits, whisk together a small amount of honey, Tequila Blu and lemonade and pour over the fruit. Let it soak, or enjoy immediately.

Top your favourite salad with tequila vinaigrette
Combine small amounts of finely grated lime and orange zest, lime juice, Tequila Blu, sherry vinegar, olive oil, Tabasco sauce and a pinch of salt. Whisk until blended and toss through your salad.
