TGIF Cocktail Recipe: Watermelon-Jalapeño Margarita

Warmer weather has us preparing for sunny afternoons and balmy nights spent sipping on cocktails with good friends. We say goodbye to winter comfort foods and warming drinks and make way for light, fresh cocktails that scream summer.

For those fond of tequila-based cocktails, or new to them, Tequila Blu shares a new way to mix up your margaritas!

Watermelon-Jalapeño Margarita

Makes 1 jug

Ingredients

8 cups cubed watermelon

1 1/2 cups Tequila Blu

1/2 cup orange liqueur

1/2 cup fresh lime juice

1 cup simple syrup (mix of 1 cup sugar and one cup water)

1 to 2 jalapeno peppers, sliced thinly

Ice

Fresh jalapeno slices and watermelon wedges to garnish

Method

  1. Puree watermelon in blender or food processor (you may have to do this in batches) then pour through a strainer. Discard pulp and seeds.
  2. Combine watermelon liquid, Tequila Blu and rest of ingredients in a large jug.
  3. Cover and chill for one hour (the longer you chill the mix the stronger the jalapeno flavour will be).
  4. Serve over ice.

For those fond of tequila-based cocktails, or new to them, Tequila Blu shares a new way to mix up your margaritas!

Fresh Orange Margarita

Ingredients

1 cup freshly squeezed orange juice*

3 tbsp sugar (preferably a fine sugar like caster sugar)

8 shots premium tequila –we suggest Tequila Blu.

7 shots triple sec or orange liqueur

Garnish with freshly sliced orange.

*For a variation on this recipe substitute the orange juice with blood orange juice

Method

  1. Create an orange syrup by combining orange juice and sugar in a saucepan and simmering on low heat until mixture forms a syrup. Allow to cool.
  2. Combine all ingredients in a large jug and serve over ice.
  3. Alternatively, place enough liquid for one cocktail in a shaker with ice; shake and pour into a margarita glass.

Cucumber and Mint Margarita

Serves 2

Ingredients

1/2 cup chopped cucumber

⅓ cup Tequila Blu

2 tbsp sugar

1/4 lime juice

1/4 cup chopped mint

2 tbsp orange liqueur

6 ice cubes

Garnish with cucumber slices and a salted rim

Method

  1. Blend all ingredients in a blender for one minute.
  2. Pour into two salt-rimmed glasses.
  3. Garnish with slices of fresh cucumber. You can add more ice if the mix is too thin and create a frozen margarita. Tasty!

How To Have A Dinner Party, Tequila Style

Margarita recipes are in abundance, and we all know that tequila and lemon or lime is a match made in heaven, but for such a popular spirit the versatility of tequila is vastly unknown.

Tequila is not just a means for kicking off a party; it can be the whole focus of one, enjoyed as an accompaniment to a delicious meal or incorporated into recipes for those who just can’t get enough. Tequila Blu shares an inspired dinner party menu… the theme? Tequila, of course! Get the party started and wow guests with this delicious three-course menu that incorporates tequila for some added zing!

Entrée – Drunken prawns

Ingredients

2 ½ cups olive oil

¾ cup Tequila Blu

½ cup fresh coriander, chopped

½ cup freshly squeezed lime juice

½ cup pineapple juice

¼ cup white vinegar

1 tbsp garlic salt (or plain rock salt)

1 tbsp ground black pepper

1 tsp seasoned salt

30 prawns, peeled and de-veined

Method

  1. Combine all ingredients (except the prawns) in a blender and blend until smooth.
  2. Place prawns in a bowl and cover with the mixture, stir through evenly and allow to marinate for at least two hours
  3. Over a medium heat, cook the prawns in a frypan until cooked through (10-15 mins approx.)
  4. Serve and delight guests!

Main – Tequila lime chicken with margarita guacamole

Ingredients

4 limes

1 cup Tequila Blu

¼ cup olive oil

2 tsp salt

5 cloves of garlic

1 jalapeño, sliced

½ bunch chopped coriander

12 chicken breasts

Method

  1. Squeeze the juice of 4 limes into a food processor and add tequila, salt, olive oil, jalapeños, parsley and garlic. Blend until combined.
  2. In a large tray place chicken breasts and tequila-lime mixture, cover and place in fridge overnight to marinate.
  3. Once marinated, grill chicken over medium to high heat until cooked through. Slice and serve.

For the guacamole…

Ingredients

2 large avocados

Juice and zest of 1 lime

½ tsp. orange zest

3 tbsp. chopped coriander

Salt and pepper to taste

Method

  1. Scoop out inside of avocados and mash, stir in the rest of the ingredients and serve alongside the chicken.
  2. You can also serve this dip as an entrée with corn chips!

Dessert – Tequila lime tart

Ingredients

1 ½ cups crushed plain sweet biscuits

¼ cup melted unsalted butter

¼ cup pine nuts

2 tablespoons of sugar

Method

  1. To make the crust for the tart combine biscuits, butter, pine nuts and sugar in a food processor and blend until it begins to clump together.
  2. Press the mixture into the base and sides of a 9-inch spring form tart pan.

For the filling…

Ingredients

1 can sweetened condensed milk

Yolks of 4 large eggs

½ cup fresh lime juice

¼ cup Tequila Blu

2 egg whites

1 tbsp sugar

Whipped cream and fresh lime slices to garnish

Method

  1. Preheat oven to 180 degrees Celsius. Mix condensed milk, egg yolks, lime juice and tequila in a bowl and set aside.
  2. Whisk egg whites and sugar in a bowl to form soft peaks then gently fold in 1 and a half cups of the condensed milk mixture with a rubber spatula. Fold in the rest of the mixture until just combined.
  3. Pour mixture into the prepared tart pan and bake for approximately 40 minutes, or until the mixture has fluffed up and a tester inserted into the tart comes out clean.
  4. Cool completely, then chill until cold.
  5. Garnish with whipped cream and fresh lime.
  6. Enjoy the fiesta!

5 Ways To Serve Tequila (Without The Lick, Sip, Suck)

You don’t have to be in Mexico to enjoy tequila a variety of different ways. Bypass the standard shots at the bar with our list of five ways to celebrate tequila properly, thanks to Tequila Blu.

Spiked Mexican hot chocolate
This spicy hot chocolate gets its kick from the Oaxacan chocolate that is traditionally used to make it and with the inclusion of agave nectar and fine tequila, like Tequila Blu, this drink screams with the taste of Mexico!

Serves 2

Ingredients

3 cups milk of choice

1 ½ bars of good quality, spicy chocolate

6 tbsp cocoa powder

2 tbsp agave nectar

1 ½ shots Tequila Blu

½ heavy whipping cream or ½ cup water

Cayenne pepper to taste (optional)

Method

  1. Warm the milk in a saucepan on the stove.
  2. Add chocolate, cocoa and agave nectar and whisk to melt chocolate.
  3. Season with cayenne pepper.
  4. Pour into two large mugs, top with whipped cream and garnish with ground cinnamon.

Tequila and orange
When you think of drinking straight tequila you might jump to thoughts of lime and salt, a seedy nightclub and a bad hangover… but it doesn’t always have to be that way. Why not try something different like the Tequila Blu Citrus Harvest?

Ingredients

45 ml Tequila Blu

Slice of fresh orange

Vanilla Sugar

Or try making a tequila and orange granita:

Ingredients

1 ¼ cups water

½ cup sugar

juice of 7 oranges

6 tablespoons of Tequila Blu

Method

  1. Combine 1 ¼ cups water, ½ cup sugar (or agave nectar for a more Mexican twist), juice of 7 oranges (2 1/3 cups approx.), and 6 tablespoons of Tequila Blu, stirring until sugar is dissolved.
  2. Pour into a baking pan and place in freezer until frozen, and then use a fork to break up the ice before re-freezing until solid. Continue to break up ice crystals with a fork every 20 minutes until the mix becomes slushy. Spoon into glasses and garnish with orange slices.

Margarita ice cream

Ingredients

125 ml lime juice

2 tablespoons tequila

3 tablespoons Cointreau (or triple sec)

150 grams icing sugar

500 ml double cream

Method

  1. Pour the liquid ingredients (lime juice, tequila and Cointreau) into a bowl and stir in sugar until it is dissolved.
  2. Add cream, whip til it becomes think and smooth but not stiff!
  3. Place in an airtight container and freeze overnight.

Tequila poured over sorbet

This one is an easy twist on an old favourite.
Place a few scoops of lemon, lime or berry sorbet in a glass with a salted or sugar coated rim, and drizzle with tequila for a deconstructed margarita.

Edible strawberry and tequila bites

Ingredients

Large strawberries (amount required depends on how many shots you plan on making)

1 x packet of jelly (choose a flavour that will go well with strawberries)

Tequila Blu

Method

  1. Prepare your strawberry cups first.
  2. Chop off the top/green part of the strawberries and hollow out to create a cup or mould. If your strawberries are large enough you may like to cut off the bottom, just enough to make the strawberries able to stand up on their own but be careful not to cut through to the hollowed out middle.
  3. Follow instructions on the packet to make your jelly, substituting ¾ cup of water with tequila. We suggest preparing the jelly in a jug so it is easy to pour into the strawberry cups.
  4. Once you have made the jelly liquid, fill the strawberry cups and place in the fridge until jelly is set. If your strawberries aren’t able to stand up, an empty egg carton will make a great tray. You can experiment using oranges and other fruit too!
