TGIF: Frozen Jalapeno Margarita Recipe

Treat yourself to an afternoon drink just in time for the weekend. One of our favourite cocktails is a classic margarita, but this frozen jalapeno version is just as good (if not better!). Feel free to add some of your favourite sweet fruits into the mix, such as mango and strawberry.

Ingredients

3/4 cup tequila

2 jalapenos

1/3 cup Triple sec

1/3 cup lime juice

1/3 cup lemon juice

2 cups ice cubes

Instructions

  1. Chop the jalapenos and infuse them in the tequila for 30-40 minutes. Combine all the rest of the ingredients (with ice), then blend until smooth.
  2. Rim glasses with salt, then pour in the mixture. Serve with jalapeno rounds and chilli flakes for an extra kick!

4 fresh lime wedges

2 fresh ginger slices

30ml ginger beer

Method

  1. Muddle lime and ginger together in a boston glass.
  2. Add rum and ice.
  3. Shake all ingredients in a Boston shaker.
  4. Pour straight into a rock glass and top up with ginger beer.
  5. Garnish with a spring of mint.

TGIF: The Farmer’s Son With Whiskey And Chartreuse

It wouldn’t be a TGIF without a cocktail! This whiskey and chartreuse concoction (aka The Farmer’s Son) was created by Toby Marshall over at popular Sydney bar, Palmer & Co. Calling upon his Grandfather’s heritage for inspiration, the drink uses “ingredients from different European countries” to deliver a smooth and zesty taste.

45mL Glenfiddich 12 Year Old

15mL Cynar Liqueur

10mL Yellow Chartreuse

2 dashes of Fernet-Branca liqueur

Ingredients

60mL Glenfiddich 14 Year Old Rich Oak

30mL hot water

15mL fresh lemon juice

5mL honey

2 egg yolks

1 cup sugar

1/3 cup Marsala wine

1/3 cup cold water

Method

  1. Add egg yolk, sugar, cold water and Marsala into a bowl and whisk lightly.
  2. Warm mixture by putting the bowl over a saucepan of hot water. Keep whisking the mixture until it turns into a light custard. Pour the hot mixture into an iSi thermo cream gun. Charge once and shake well.
  3. Add all other ingredients to a small whisky sipper and stir until mixed.
  4. Take the iSi thermo cream gun and add approx 45mL of the hot foam on top of the drink.

Ingredients

60g (1/4 cup) white sugar

12 sprigs fresh mint

1 lemon, thinly sliced

300ml fresh lemon juice

250ml (1 cup) rum

1 cup crushed ice

Soda water, chilled, to serve

Method

  1. Divide the sugar and half the mint among serving glasses. Use a fork to crush the mint into the sugar.
  2. Divide the lemon and remaining mint among the glasses.
  3. Combine the lemon juice and rum in a large jug.
  4. Pour the lemon juice mixture among the glasses. Top with ice and soda water. Serve immediately.

60ml (1/4 cup) Baileys Original Irish Cream liqueur

125ml (1/2 cup) pouring cream

2 tbsp bought chocolate sauce

1 1/2 tablespoons honey

2/3 cup ice cubes

Extra honey, to serve

Chocolate sprinkles, to serve

Method

  1. Place the Frangelico, Baileys, Kahlua, cream, chocolate sauce, honey and ice cubes in the jug of a blender. Blend until smooth.
  2. Place extra honey in a bowl. Place chocolate sprinkles on a plate.
  3. Dip the rim of each serving glass in honey, then in chocolate sprinkles to coat.
  4. Divide the cream mixture among the glasses to serve.

  1. Divide the sugar, mint and lime among serving glasses. Use the end of a rolling pin to gently muddle until lime is crushed.
  2. Pour vodka among glasses, then top with soda water and ice.
  3. Stir gently, then serve.

TGIF: Best of British Sour Cocktail Recipe

This British sour recipe allows you to get a little creative in the bar by incorporating homemade syrups. And while you will need to set aside some extra time for preparation, the flavour combination is well worth the extra effort!

Ingredients 

35 mls Greenall’s gin

15 mls earl grey syrup

15 mls mandarin syrup

15 mls lemon

Dash lime

Earl grey syrup

12 tea bags

250 mls sugar syrup

250 mls water

Mandarin syrup

500 mls mandarin juice

150 mls sugar syrup

Method

  1. To make the earl grey syrup, simmer 12 tea bags in 250 mls sugar syrup and 250 mls water for 20 mins.
  2. Cool and let sit for 30 mins. Fine strain, chill and store.
  3. To make the mandarin syrup, simmer 500 mls mandarin juice and 150 mls sugar syrup for around 20 mins. Add 2 twists black pepper and pinch of salt. Simmer to reduce by 50 per cent for around 30 mins on low heat. Let cool for 15 mins. Chill and store.
  4. To make the cocktail shake over ice and strain ingredients into a long glass filled with ice.
  5. Garnish with a lemon squeeze and pinch of lemon sugar.

TGIF Mint and Cucumber Vodka Cocktail Recipe

This refreshing cucumber and vodka cocktail is the perfect way to unwind after a long week. Teamed with lime, mint and a hint of sugar, it’s a light, summery and hydrating drink that’s guaranteed to be a hit among colleagues or friends.

Makes 4

Ingredients

2 cucumbers

ice cubes

fresh mint

2 tsp granulated sugar

3 tbsp fresh lime juice (from 2 to 3 limes)

119 ml Vodka O

24 ml cointreau

Method

  1. Cut 4 thin spears from 1 cucumber for the garnish. Peel remaining cucumber, and quarter lengthwise. Scrape out seeds and discard. Coarsely chop, then puree in a food processor until smooth.
  2. Strain through a fine sieve, pressing on solids to extract as much liquid as possible.
  3. Fill a cocktail shaker with ice. Add mint, sugar, lime juice, cucumber juice, Vodka O, Cointreau and shake.
  4. Strain into 4 glasses filled with ice. Garnish each cocktail with a cucumber spear and mint.

Cucumber and Mint Margarita

Serves 2

Ingredients

1/2 cup chopped cucumber

⅓ cup Tequila Blu

2 tbsp sugar

1/4 lime juice

1/4 cup chopped mint

2 tbsp orange liqueur

6 ice cubes

Garnish with cucumber slices and a salted rim

Method

  1. Blend all ingredients in a blender for one minute.
  2. Pour into two salt-rimmed glasses.
  3. Garnish with slices of fresh cucumber. You can add more ice if the mix is too thin and create a frozen margarita. Tasty!

Tequila Blu Cardamom Mojito

  1. Muddle (bartender lingo for mix!) 3 lime wedges and a teaspoon of vanilla sugar in a tall cocktail glass.
  2. Add 45 ml of Tequila Blu, 2 dashes of cardamom bitters, 6-8 mint leaves and a scoop of crushed ice.
  3. Churn well.
  4. Add a dash of soda water and fill glass to the rim with additional crushed ice.
