Warmer weather has us preparing for sunny afternoons and balmy nights spent sipping on cocktails with good friends. We say goodbye to winter comfort foods and warming drinks and make way for light, fresh cocktails that scream summer.
For those fond of tequila-based cocktails, or new to them, Tequila Blu shares a new way to mix up your margaritas!
Makes 1 jug
8 cups cubed watermelon
1 1/2 cups Tequila Blu
1/2 cup orange liqueur
1/2 cup fresh lime juice
1 cup simple syrup (mix of 1 cup sugar and one cup water)
1 to 2 jalapeno peppers, sliced thinly
Fresh jalapeno slices and watermelon wedges to garnish
- Puree watermelon in blender or food processor (you may have to do this in batches) then pour through a strainer. Discard pulp and seeds.
- Combine watermelon liquid, Tequila Blu and rest of ingredients in a large jug.
- Cover and chill for one hour (the longer you chill the mix the stronger the jalapeno flavour will be).
- Serve over ice.
