Weekend Brunch Ideas: Avocado Scrambled Eggs

There’s nothing more indulgent than a leisurely weekend brunch. Pour some OJ, grab the paper and enjoy these heavenly avocado scrambled eggs.


Serves: 4


Prep Time: 5 minutes Cook Time: 2 minutes


Ingredients

2 avocados

8 eggs

Milk

Olive oil

Salt and pepper


Method

1. Beat 8 eggs, ½ cup milk, salt and pepper in a bowl.

2. Put 3 tbsp light olive oil in a large non-stick frying pan. Heat on medium heat.


3. Add the egg mixture and stir gently until starting to set.


4. Stir through 2 thickly sliced avocados. Serve over toast.
