Winter Warmers that won’t weight you down (con’t)

Dinner: Oven Fried Chicken with Almonds
You don?t have to fry your chicken to get that fried taste. This recipe is cooked in the oven and has a faint nuttiness from the almonds to top it off.
1 cup whole wheat bread crumbs
? cup grated parmesan cheese
? cup finely chopped almonds
2 tablespoons chopped parley
1 clove garlic, crushed
1 teaspoon salt
? teaspoon dried thyme
Pinch of ground black pepper
? cup extra virgin olive oil
2 pounds boneless, skinless chicken breasts, pounded to ? inch thickness and cut into 12 pieces
Sprig Italian parsley, for garnish
Preheat the oven to 205 degrees.
In a medium bowl, combine the bread crumbs, cheese, almonds, parsley, garlic, salt, thyme, and pepper. Mix thoroughly.
Place the garlic in a shallow dish. Dip the chicken first in oil, then dredge in the crumb mixture. Place the chicken in a shallow baking pan.
Bake for 25 minutes, or until a thermometer inserted in the centre of a piece registers 77 degrees and the juices run clear. (Do not turn the chicken during cooking) Garnish with the parsley.

The wine to go with it!
It?s been a while since cask wine has had a place in the public eye. Ever made the excuse, “I bought this on special; no idea what it?s like” or “This was left over from the weekend barbecue.” With the new Sandra?s 2 litre cask, there?s no reason for such paltry excuses. Sandra Miranda has joined forces with Lisa McGuigan from Tempus Two Wines and young award winning wine maker Sara-Kate Dineen to make a new blend of cask wine that is perfect for the modern woman. The blends of Semillon Sauvignon Blanc and Cabernet Merlot go down really easily and are perfect for a light wine after work, or an afternoon picnic. The pack has a fresh, stylish, vibrant feel and at $10.99 for 2 litres, you just can?t go wrong!
